Links I Love, Right Now

Last week when I posted the first ‘Links I Love, Right Now‘, I explained that it was in the spirit of my old ‘Friday is for Favorites‘ series, which I specifically stated I would not be bringing back. I also had no intention of making ‘Links I Love’ (which was truthfully a sort of last-minute post idea anyway) a regular series. However, it was one of the highest traffic posts of the past month, which I’m assuming (hoping?) means you guys liked it. And I really liked putting it together. Therefore, I’m thinking I will continue to do it every now and then – maybe once or twice a month at most. As long as it feels right, man.

Although I think a roundup of my favorite links/things in a given week is normally best suited for Fridays, we’re heading out of town this afternoon for a short trip to our favorite quick summer weekend getaway destination, Lake Geneva in Wisconsin. Robbie is going to be on the road with the band for all of Father’s Day weekend, so we decided this would be the perfect time to celebrate early with a mini vaca. It’s sort of a thing for Chicago area people to visit Lake Geneva in the summer months – I went at least once a summer as a kid, Robbie and I have always visited once or twice a year, and last summer, we took Essley for her first time. (You can see some moments from that trip here. She looks so tiny!) I’m really looking forward to seeing how she likes it now that’s she’s a little older. There’s a whole lot of rain in the forecast so I’m not sure how much beach time we’ll get in, but we’re pretty good at seeking out fun regardless of weather or circumstances. I’m not allowing myself to bring my laptop or camera (I’m gonna be fully present for this one, damn it), but knowing myself I’m sure there will be at least a photo or two from the trip on my Instagram.

Dads watching their own kids are not ‘babysitting.’  Amen. Robbie and I are equally Essley’s parents. We each spend time working and raising/taking care of her, alone and together. He isn’t ‘babysitting’ when he’s with her and I’m gone any more than I am when he’s gone. I can’t wait until this outdated way of thinking disappears.

The coziness level of our bed has grown exponentially since we got this quilt (in silver gray) earlier this week. Garnet Hill rocks.

I had tacos at a restaurant in Austin, Texas a few years back with a main ingredient of fried avocados. I basically died. And while browsing Bon Appetit the other day, I found this recipe. I am so making these.

I love those albums that contain lullaby versions of rock songs for babies. And as of this week, one has officially been made for the band my husband stage manages. Get your very own right here.

My best (male) friend is getting married in California in two months, and Essley and I are both in the wedding. I need to find a lavender colored dress for Ess, and in my search stumbled upon this super cute kids clothes shop on Etsy. (I still haven’t found the perfect formal dress though; if you have suggestions, I’d love to hear them!)

These ice pops. (Pineapple. Cilantro. Blackberry.Vodka. I don’t even like cilantro but I still want to make these, because duh.)

Quickly Pickled Onions

I love onions and I love pickles, so I thought it would make perfect sense to prepare pickled onions to keep as a permanent pantry item at home. I have had them many times at Puerto Rican restaurants and in simple balanced Asian dishes, so why not just at home? For me, they always just seemed like too much work, but amazingly enough, they are the easiest accompaniment ever to make for any occasion.

1 Red Onion
1 c Apple Cider Vinegar
1 c Water
2 T Sugar
1 T Kosher Salt
10-12 Peppercorns

Slice onion and throw them in a large mason jar. You can boil the other ingredients before you add them to the jar, but I simply add the apple cider vinegar, water, sugar, salt, and peppercorns to the jar and shake after putting the lid on to help dissolve the solids in the liquid. Within 1-2 hours, you have perfectly pickled onions.

You can add these to black bean tacos, grilled pork chops, or scrambled eggs in the morning. The possibilities are almost endless. It adds the perfect amount of acid to really any dish! Enjoy! – Sara

mrfancy-lgThey say adopted cats choose their humans and that’s certainly what happened with Ann Bosche and her adopted cat, Mr. Fancy.

According to, it all began when Bosche was in her backyard with her dog, Gracie. The pup noticed something in the bushes, watching them. “What came out from under that bush was a large beautiful cat with a white tip on his tail. I said, ‘Aren’t you a fancy thing?’”

The cat looked thin and dirty so Ann fed him. Although skittish at first, the cat eventually ate. And, he came back the next night and every night after that. Eventually he would wait on the porch in the morning and again in the evening.

After a month, Bosche’s husband gently reminded her that they already had a houseful of pets and it would be best to find the cat another permanent home.
