St. Paddy’s Day Cheese Quesadillas

St. Paddy's Day Cheese Quesadillas

I know I share this recipe year after year, but I am constantly tweaking and then feel compelled to give you guys the updated version. These green quesadillas are perfect to make any time (my kids love them), but they’re especially fun to make around St. Patricks

Serves 1-2

Ingredients
Large spinach tortilla
1 cup grated grated cheddar cheese
3/4 cup baby spinach
1/2 tablespoon coconut oil (butter works too)
1/2 cup green salsa
1/2 avocado, cubed
Small handful of cilantro (optional)
1/2 lime

Melt oil in a large skillet over medium heat. Place the tortilla in the pan and flip to warm both sides. Sprinkle cheese over half of the tortilla, then cover with baby spinach leaves. Fold uncovered side over the top of the covered side to fold in half. Reduce heat and cover the pan for about a minute. Uncover, flip, and cover again for a minute. Repeat this until the cheese is fully melted. Remove from pan and slice into wedges. Top with salsa verde, cubed avocado, cilantro, and a squeeze of lime juice.

Saturday Survey: Euthanasia

Earlier this week, I posted about the decline in euthanasia in pet shelters, but I want to ask today about the broader question of euthanasia. I have a relative who is absolutely against it under any circumstances, while I tend to think it can be a humane solution when a dog is suffering. My son, … Continue reading Saturday Survey: Euthanasia

Lemon Mango Prosecco Spritzers

Mango Lemon Prosecco Cocktails

Yes, this is a summer inspired drink. Yes, summer is four months away. But I firmly believe that’s even more reason it enjoy it now. This is such a delicious after dinner treat, and, when the weather finally does warm up, incredibly refreshing. It combines some of my favorite flavors too (lemon + prosecco).

Mango Lemon Prosecco Cocktails
Makes 2 servings

INGREDIENTS
3 cups prosecco, chilled
1/2 cup mango sorbet
1 lemon
handful of blueberries

Pour the prosecco equally into two glasses. Cut the lemon in half and squeeze into each glass. (A strainer helps to catch the seeds.) Scoop 1/4 cup of mango sorbet into each glass. Top with blueberries. Serve immediately.

Maybe I’ll put on a tank, cut off shorts, and flip flops next time I make these, then close my eyes and pretend I’m not surrounded by two feet of snow… Enjoy!

Cheese and Black Bean Quesadilla Wraps

Salsa Verde and Black Bean Quesadilla Wraps

The quesadilla is queen in our house. It’s one of a handful of foods that every one of us will eat, and happily. And while my son prefers the plainest of the plain cheese quesadillas, the rest of us have a healthy obsession with quesadillas filled with black beans, cheddar cheese, and salsa verde. Now, regular old quesadillas are loved just fine, but when we fold them into handy little wraps, things become next level.

(Disclaimer: I used foldable tortillas for these photos, which I took a while ago. I’ve discovered that now they’re hard to find. You can still fold a regular round quesadilla into a square wrap pretty easily, but it make take a couple of tries to make it look pretty, if you care about quesadilla aesthetics.)

Cheese and Black Bean Quesadilla Wraps

Serves 4

Ingredients
4 large tortillas

1/2 tablespoon coconut oil or butter
1 cup grated cheddar cheese
1 15 ounce can black beans, rinsed
1/2 cup guacamole or mashed avocado
1/2 cup salsa verde
salt, chili powder, and garlic powder to taste

In a large skillet or griddle, melt the coconut oil over medium heat. Place tortillas on a flat surface and top each one with equal amounts of cheddar cheese, black beans, salsa verde, and guacamole. Sprinkle on spices, then fold tortilla sides in and tuck closed. Cook each quesadilla over low to medium heat and cook for 3 to 4 minutes, turning every minute, until each side is golden. Remove quesadillas from pan and serve.

If you have a favorite quesadilla recipe, please share! I love trying different versions.
