Red Curry with Broccoli and Tofu

Easy Vegetarian Thai Red Curry

The first meal I ever made for my now husband was red curry. (I also made way too many vodka and sodas, but that’s another story.) We made it often for years, then kind of forgot about it. It reemerged during quarantine though, and now it’s basically a staple. Here is how we make it!

Red Curry with Broccoli and Tofu

Serves 2-4

INGREDIENTS
package extra firm tofu, cubed*
1 can coconut milk
3 tablespoons Thai red curry paste
2 cups broccoli florets
1 tablespoon brown sugar
2 teaspoons garlic powder
2 cups cooked jasmine rice
lime
basil
salt

Use paper towel to press as much water out of the tofu as possible, and cut into cubes. (Or, if you really want to save time, buy it already cubed like I do.) Heat about a tablespoon of coconut oil (or olive oil) in a large skillet, and pan fry the tofu over medium high heat until brown on all sides. While tofus is cooking, bring coconut milk to a low simmer in a saucepan. Add red curry paste, brown sugar, and garlic powder and stir until combined. Add broccoli florets and tofu and simmer for 8-10 minutes. Serve over rice with lime juice and basil or Thai basil. Serve immediately.

Made of Star Stuff

My birthday present this year is something wonderful.  A friend of mine from graduate school alerted me to a well-bred West German showline German shepherd that was available in Southern West Virginia.

We were looking for another male to add to our breeding program, and although I am fully aware of how closely related all German shepherds are to each other, we needed another line that was health-tested to mix into ours.

We have named him Sagan, WRF Made of Star Stuff for Darqueside, and his sire is Ajaks od Slankamena, a top winner in Serbia.

His mother was bred in Serbia and then imported while pregnant to West Virginia.  He was well-socialized and trained in West Virginia, because his owners, who run a boarding and training business, were going to keep him as one of their personal dogs.

He was initially named “Edward,” but I always wanted to give a German shepherd a science nerd name.  And since it was my turn to name the dog, this one became Sagan.

I have had him a few weeks, and I have to say this is the best dog I’ve ever had. He is biddable and smart. He is gentle and kind.  He loves kids.  He loves me. I know that he will eventually mature into something more serious and loyal, but right now he is the happy, goofy puppy who fears nothing.

The way he looks at me is the way a smart dog looks at person. He has become my office dog, and he lies by the door while I’m teaching my remote students. He knows that if I rise, the next thing will be a walk or a chance to play with the jolly ball.

He knows no evil. He knows only the joy of his lion paws tearing through the green grass.

I have never had one of this type before.  He is a sound moving dog, though not as flashy as our American dogs, but he possesses a profoundly good temperament. He is very similar to Quest, our 100 percent American male.

He is the best birthday present I have received in a long time, and he’s a very special dog.

I am absolutely certain that this is the breed of dog I was always supposed to have. I know there are lots of crappy German shepherds out there, but a good one is an awesome dog to have.

Our Laundry Room/Mud Room Before and After

A Gorgeous Laundry Room Remodel

As we continue to (very, very slowly) DIY remodel our kitchen, I’ve been compelled to look back at some of the other DIY remodels we’ve done on our house since moving in two years ago. I’d be lying if I said I didn’t envy those who get to remodel their entire houses (or build from scratch) to their liking, but I also very much appreciate looking at projects we’ve worked hard on and completed ourselves over time. So far, we have redone our backyard space, powder room, living room, and, the biggest project of all, our laundry room/mud room. Today I wanted to share some of the before and afters of the laundry room (which we remodeled back in June of 2018). I know some of you have seen this before, but I think maybe I just need to feel encouraged that we can actually complete a project. (This kitchen, man. It’s getting to me.) I also still really love the space, and haven’t made any other changes to it in the the two years since we did it, aside from switching out the cabinet hardware from stainless to brass to warm it up a bit.

Here are the few shots of the space before we redid it:

Thee original space severely lacked storage and an area for us to fold laundry. It also didn’t have the essentials to make it a mudroom. Because we enter our house through the garage, we needed a bench or some sort of area to take off shoes and store them.

After putting together some ideas and mood boards, we put together some very rough renderings of a new design. We also made a list of the things we would need to do in order to make the space best suited for our family: replace the old linoleum floor with durable tiles, build a counter for folding, build a bench with an area for storage, add two rows of cabinets for storage, add shelves for storage and visual appeal, paint the room a darker color, replace the light fixture, replace the old washer and dryer with newer models that actually worked, and add accessories that would allow the space to be more inviting as we entered our home.

We purchased what we needed, and did the majority of the work at night after the kids went to bed. I go into (extreme) detail of how we did everything and what we purchased in this post, but it took us about three weeks from start to finish. (Unlike the kitchen. Have I complained about the kitchen yet?)

I really do love this room! It was a lot of work, but we reap the benefits everyday. I hope to get the kitchen completed by the end of the summer, and maybe even start on the upstair bathrooms. Mesquite Grilled Sweet Potato Wedges with Tofu and Corn

These days more than ever, it’s simple pleasures like grilling on the patio with my family that bring me the most happiness. I’ve been playing around with different ways to grill veggie foods, but my very favorite meal right now is sweet potato wedges, corn on the cob, and tofu steaks. I grill all of this with McCormick Grill Mates Mesquite Seasoning. The grilled mesquite sweet potatoes are especially a hit in our house, and they’re incredibly easy to make, so today I thought I’d share the recipe with you all.

MESQUITE GRILLED SWEET POTATO WEDGES
Serves 4

Ingredients
2 sweet potatoes
McCormick Grill Mates Mesquite Seasoning
3 tablespoons olive oil

Light grill to preheat. Wash sweet potatoes well, dry, and cut lengthwise into wedges. Toss wedges with the olive oil, then sprinkle McCormick Grill Mates Mesquite Seasoning on each side, and place on grill. Grill the sweet potatoes, turning once or twice, until grill marks appear on each side and each sweet potato is soft, about 15 minutes. I like to sprinkle some more of the McCormick Grill Mates Mesquite Seasoning on each side during the grilling process as well. Once done, transfer to plates and serve immediately. I love to serve with grilled mesquite tofu steaks, grilled mesquite corn on the cob, and fresh greens. They’re also fantastic on their own as a snack. So good!

(Note: The tofu steaks and corn on the cob are super easy too. For the tofu steaks, cut extra firm tofu into rectangles, remove excess water, and marinade with McCormick Grill Mates Mesquite Marinade, following the directions on the packet. Then grill for 6-8 minutes, turning twice. For the corn, baste with melted butter and grill until heated. Top both with McCormick Grill Mates Mesquite Seasoning.)

The key ingredient to my beloved mesquite grilled sweet potatoes (and the tofu and corn!) is the McCormick Grill Mates Mesquite Seasoning. This seasoning is genuinely next level you guys. Its bold flavor (smoky, barbecue goodness) and spicy crunch make everything in the meal taste more exciting. It also makes prep and cooking simple (I just shake a little on each side of the sweet potato wedges, tofu, and corn), so I can spend more time hanging with the people I love, just enjoying the bold flavors together.
