Summer may still be far, far away here in Chicagoland, but that isn’t stopping me from starting to shop for sunny weather clothes. I mean, if I stop buying winter pieces, winter will be over faster, right? Isn’t that how it works? Regardless, spring is just a few weeks away, so I think I’m definitely justified in looking ahead to warmer days.

One of my favorite warm weather pieces to buy is the little girl’s sundress. My 6 year old probably has way too many of them already due to my affinity for them (she already has #5 and #9 from above), but you can’t beat a cute cotton number like these above that they can happily play in for less than $ 10.

Now if they only made #2 in my size…

Creamy Yogurt Salsa Verde Dip

This is a long time favorite in our house that we’ve recently updated to add different spices. It’s incredibly easy to whip together with ingredients you most likely have on hand. (If you don’t have salsa verde, you can use regular salsa instead.)

Creamy Yogurt Salsa Verde Dip
Creamy Yogurt Salsa Verde Dip

CREAMY YOGURT SALSA VERDE DIP
Serves 4-6

Ingredients
1/2 cup plain cup Greek Yogurt
1 cup salsa verde
1/2 lime
chili powder
garlic powder
red pepper flakes
salt

In a medium to large bowl, combine Greek yogurt and salsa verde until well blended. Squeeze in the juice of half a lime, and add a pinch of each spice to taste. (I love me some heat, but you can omit the red pepper flakes if you prefer a more mild version.)  Stir well and chill for 30 minutes.

Creamy Yogurt Salsa Verde Dip

So easy and so delicious. And also filled with protein, thanks to the Greek yogurt. Double win!

I see it as a day to celebrate kindness, friendship, compassion, generosity, and love. And honestly, our country and world needs love right now. Like more than ever.

Fresh Lemonade Mimosas

Fresh Lemonade Mimosas

The official first day of spring may still be five weeks away, but my eye is on the freaking prize, man. I’m busting out my spring time clothes way too early, and I’m not ashamed in any way. I’m also starting to enjoy my favorite spring (and even summer) themed cocktails, like my beloved fresh lemonade mimosa. I hope you love it (and my unapologetically spring inspired photos of it) as much as I do.

FRESH LEMONADE MIMOSAS

Serves 6-8

INGREDIENTS
1 bottle champagne or prosecco
4 cups water
1 cup sugar
2 cups fresh squeezed lemon juice
lemons (for garnish)
fresh mint (for garnish)
course sugar (for rim)

DIRECTIONS
Combine the cup of sugar with 1 cup of water in a small saucepan. Bring to boil and stir until dissolved. Allow the syrup to cool, then chill in the refrigerator. In a pitcher, stir together the lemon juice, the chilled syrup, and the remaining 3 cups of water.

Use lemon juice or water to wet rims of glasses and dip each rim into the course sugar. Fill glasses about half way full with lemonade. Top with champagne or prosecco, and garnish each glassed with a lemon slice and sprig of fresh mint.

Homemade Baby Food, 3 Ways

Three Healthy Baby Food Recipes

My kids are now 4 and 6, and while they no longer eat baby food (aside from sweet potato puree minus the breastmilk/formula, which even I think is pretty freaking delicious), we still love to share our three favorite baby food recipes with friends who have tiny ones transitioning to solids. And today, we thought we’d share them with you as well!

If you’re feeding your baby solids for the first time, make sure you first offer single ingredient foods, and then wait five to seven days before offering a different food. This allows you to know without a doubt which foods, if any, might cause reactions in your babe. Once you’re aware of what foods your baby can tolerate, you can start mixing. (The avocado and banana purees I’m sharing below were big favorites for mixing around here.) When your little one hits about the ten months mark, you can use a fork to mash instead of pureeing them.

AVOCADO BABY FOOD

INGREDIENTS
1 large, ripe avocado
breast milk or formula

Slice down the middle (length wise) around the pit, then remove the pit (but don’t discard).  Use a spoon to scoop out the flesh of the avocado, and place into a blender or food processor. Add a small amount of breastmilk or formula, and puree. Continue to add more breastmilk or formula until you reach the desired consistency. Store any leftovers in the refrigerator with the pit (which will help to keep it fresh) for up to 48 hours. (Don’t feed pit to the baby though. Duh.)

SWEET POTATO BABY FOOD

INGREDIENTS
1 sweet potato (get organic if you can)
breast milk or formula

Preheat oven to 400 degrees. Prick washed sweet potato several times with a fork. Bake for 45 minutes to an hour, until tender.  Remove from oven and allow to cool. When cooled, slice open and scoop flesh into a blender or food processor. Add a small amount of breastmilk or formula, and puree. Continue to add more breastmilk or formula until your desired consistency is reached. Store leftovers in the refrigerator for up to 48 hours.

BANANA BABY FOOD

INGREDIENTS
1 banana
breast milk or formula

Peel banana, place in blender or food processor, add a small amount of breastmilk or formula, and puree. As with the others, continue to add more breastmilk or formula until your desired consistency is reached. Use immediately (or freeze and serve as an ice cream to older babes!).

I admittedly miss making these for my little ones. Enjoy!
